Bacon in the air fryer

Bacon is nearly all surface, the clearest case of flat food the converter handles. A strip is only a few millimeters deep, so there is no middle for heat to reach; the whole job happens where the fan touches the meat. Moving air dries the surface first, then the rendering fat fries the strip in its own grease, which is why air fryer bacon tends to come out flat and evenly crisped without the constant turning a skillet demands.

Two things decide the outcome: layout and grease. Strips need a true single layer with no overlap; where two strips lap, steam collects and that patch stays limp while everything around it browns. Grease is the real hazard. Bacon renders a surprising amount of fat, the fat pools close to the heating element, and once it passes its smoke point the kitchen fills fast. Managing the grease matters more than any temperature choice.

Cut matters too. Regular cut renders quickly and can slide from mahogany to bitter in the final minutes, so the early first check earns its keep. Thick cut carries more fat and holds a little chew at the center of each strip; it belongs at the longer end of any oven direction before converting.

These are starting numbers, quoted a little short on purpose: checking early and adding a minute beats scraping off a burnt layer. The converter on the front page adjusts them for a specific machine and keeps refining them from ratings.

Pick the Flat picture. A bacon strip has almost no interior; the surface is the whole story, so the fan delivers its full advantage and the converter makes its deepest temperature and time cuts. Choosing Thick would pretend heat still has somewhere to travel inside the strip, and the quoted time would run longer than bacon needs.

  • Put two or three tablespoons of water in the drawer under the basket before cooking. Dripping fat hitting hot metal is what makes the smoke; a shallow pool of water keeps it below its smoke point.
  • Lay the strips in a strict single layer with no overlap, halving them if the basket is small. Overlapped sections trap steam and stay limp while everything around them crisps.
  • Turn the strips at the first check. Bacon curls as the fat renders, and turning flattens the curl and evens the color on both faces.
  • Pour off the drippings and refresh the water between batches. Grease left from the first round smokes during the second, and a machine that is already hot usually finishes the next batch sooner.
  • Pull the strips one shade lighter than the target and drain them on paper towels. Bacon keeps crisping as it cools, and a strip can always go back for another minute.
